Abstract

This paper was aimed towards evaluating the functional properties and storage stability of red kidney bean (Phaseolus vulgaris) and local rice (Oryza sativa) composite flour. To highlight the immense functional attributes and storage stabilities of combining these flour blends to improve the quality of various food products, five samples were derived from the flour blend (samples A to E). In the ratio of rice to red kidney beans, sample A contains 0:100%, sample B contains 100:0%, sample C contains 25:75%, sample D contains 50:50% and sample E contains 75:25%.  Results obtained indicated that the functional parameters ranged from 0.61 to 0.74% bulk density, 1.91 to 2.46% water absorption capacity, (WAC), 0.96 to 1.43% for oil absorption capacity (OAC), 18.34 to 51.44% foam capacity, 2.06 to 2.84% swelling capacity, and 69.15 to 78.63oC gelatinization temperature.  The total viable and fungal count was within the recommended and acceptable values, while there were no coliform growths found on the samples.  From the evaluation of some selected functional properties, the results reveal that increase in the proportion of rice flours increases bulk density and the swelling index. With an increasing proportion of red kidney bean flours, WAC, OAC and foaming capacity improve; this is due to increased protein contents found in legume. Legume-based meals can offer a sustainable source of protein. It was concluded that the flour blend will be useful in the production of high-fibre, low-gluten, and low-fat bakery products.

1. Introduction

A significant class of food crops in the Fabaceae family, legumes are widely grown for their edible seeds and are acknowledged for their significant contribution to human nutrition. Common legumes like beans, soybeans, and peanuts are significant parts of diets all throughout the world, especially in developing nations where they are reasonably priced sources of vital nutrients. Legumes are beneficial for basic nutrition as well as prevention of chronic diseases and the promotion of general wellbeing due to their high proteins, dietary fiber, vitamins, and antioxidant substances. Conversely, cereals, which are categorized as grasses grown for their edible grains, constitute another significant category of staple foods. Rice, wheat, sorghum, millet, and oats are a few examples. Because of their high carbohydrate content, cereals are a major source of energy. They also contain important nutrients such vitamins, minerals, antioxidants, and phytochemicals. However, rice flour's relatively low protein and fiber content limits its nutritional quality and functional performance in baking and other food systems, despite its widespread use (FAO, 2006).

In flour-based food systems, shelf life stability is still a significant issue in addition to nutritional and functional constraints. D'Souza and Banerjee (2017) defined shelf life as the amount of time that food may be utilized without losing quality, and Haouet et al. (2018) defined it as the amount of time that a food product is deemed suitable for consumption under suitable storage circumstances. Flours are vulnerable to physicochemical deterioration, moisture changes, and microbiological development during storage, all of which could have detrimental effects on their quality, safety, and customer acceptability. According to Phimolsiripol and Suppakul (2016), customers are demanding more and more high-quality food, and they expect this quality to be maintained throughout manufacturing, purchasing, and consumption.  The creation of composite flours can help overcome this restriction on cereal-based flours. By combining flours from tubers and legumes, composite flour formulations have been produced to enhance the functional and nutritional qualities of cereal-based goods. According to Noorfarahzilah et al. (2014), composite flour is a blend of flours made from various sources, such as starch-rich tubers, protein-rich flour, and cereals, with or without wheat flour, that are designed to attain particular functional and nutritional qualities.

The complimentary nutritional characteristics of grains and legumes make combining them very advantageous. By boosting protein content while preserving accessibility and affordability, these blends can alleviate protein-energy deficiency.

Although a number of studies have highlighted the nutritional advantages of composite flours, little is known about how these formulations affect storage stability and functional qualities at the same time. The physicochemical traits of food ingredients that affect how they behave during preparation, processing, and storage are referred to as “functional properties”. These factors, which include bulk density, emulsification, foaming, swelling capacity, water absorption capacity, and oil absorption capacity, are crucial in defining how flours behave during processing and product development (Awuchi, 2017; Awuchi & Echeta, 2019). Additionally, even though red kidney bean flour is well-known for having a high nutritional value, it contains substantial amounts of fiber, protein, and vital micronutrients including calcium and folic acid (Noah & Banjo, 2020). Research on its use in rice-based composite flour systems is lacking, especially when it comes to how it affects the stability of the product's shelf life and overall quality while it is being stored.

Red kidney bean flour is a promising way to increase protein content, improve functional qualities, and create nutritionally balanced food products, even though rice is a commonly available source of carbohydrates. To ascertain the shelf life and appropriateness of such composite flour for real-world uses, it is also crucial to assess both its functional characteristics and storage stability.

Functional properties influence processing behaviour, texture, and product quality, while storage stability determines shelf life, safety, and consumer acceptability. Therefore, this research deals with the development of rice and red kidney beans composite flour including the evaluation of its functional properties and shelf life stability. This will provide valuable insight into optimizing formulation and processing conditions for the development of nutritionally improved and shelf-stable food products.

2. Materials and Methods

2.1. Sources of raw materials

The local rice and red kidney beans utilized in this study were sourced from the World Bank market in Owerri, Imo State, Nigeria.

2.2. Processing of Rice into Flour

Rice was processed into flour using the modified method of Abiodun and Adepeju (2011). And Masaya and associates, (2006). Glove was worn throughout the process to prevent the introduction of extraneous materials into the flour. The resulting rice grains were meticulously sifted and winnowed to get rid of unnecessary components. It was cleaned thoroughly by washing and then oven-dried for four hours at 60°C. After letting it cool, it was blended into flour and sieved to create fine flour. The flour was stored in an airtight, clean container.

2.3 Processing of red kidney bean into Flour

The red kidney beans were processed into flour using the modified method of Abiodun and Adepeju (2011), as represented by the flow charts in Figure 2.2 Glove was worn throughout the process to prevent the introduction of extraneous materials into the flour. To get rid of unnecessary debris, the red kidney bean seeds were sifted and winnowed. After being thoroughly cleaned, it was manually dehulled, soaked in water for a whole day, and then oven-dried at 70 °C for six hours after being left to cool. Using a blender, the red kidney beans were ground into flour and then sieved to produce fine flour. All of this was followed by the flour being stored in a clean, airtight container.

2.5 Determining the Composite Flour's functional characteristics.

Standard techniques were used to calculate bulk density, temperature and gelatinization capacity, water and oil absorption capacities, and swelling index.

2.5.1 Calculating Water Absorption Capacity (WAC).

The technique described by Nishad et al. (2017) was used to calculate the water and oil absorption capacities. A dry, previously weighed centrifuge tube was filled with 1g of the flour sample. After integrating the sample flour with 10 milliliters of distilled water, it was left to stand for 30 minutes before being centrifuged for 16 minutes at 3500 rpm. After removing the supernatant, the material's tube was weighed again.

WAC (%) = Amount of Water Absorbed

Mass of Sample before absorption

2.5.2 Determination of Oil Absorption Capacity (OAC)

The oil absorption capacity was determined using the method reported by Nishad et al. (2017). One gram of the flour sample was combined with 10 ml of soybean oil. The mixture was centrifuged 20 minutes at 4000 rpm for after being left undisturbed for 30 minutes to allow for maximum oil absorption. The excess oils were then decanted, and the remaining oil was reweighed.

OAC (g/g) = Swelling Index =

2.5.3 Determination of Gelatinization Temperature

Gelation properties of the samples were determined by employing the method of

Adebowale et al., (2005). In 5 mL of distilled water, sample suspensions ranging from 2 to 20% (w/v) were made. These suspensions were cooked for one hour in boiling water (100 °C), quickly chilled in ice, and then cooled for a further two hours at 4 °C.

The least gelation concentration (LGC) was taken as the concentration when the sample from the inverted test tube did not fall down or slip.

2.5.4 Determination of Bulk Density

Bulk density was determined using the method as reported by Falade and Christopher (2015).

A 100 ml granulated cylinder was filled with 50 g of each composite flour sample. After that, the samples were tapped thirty times. The samples' volumes were noted. The following formula was used to get the bulk density:

Bulk Density =

2.5.5 Estimation of the Power or Swelling Index

A 50 ml calibrated canister with 30 mL of filtered cold water was filled with 3g of each composite flour sample during the experiment. After that, the mixture was allowed to absorb water for an hour at room temperature, and every fifteen minutes, the swelling volume was measured. Using the following formula, the swelling index of each composite sample flour was calculated as a multiple of the initial volume:

Swelling Index =

2.5.6 Determination of the Foaming Capacity

The foaming capacity of composite flour samples was determined using the standard procedure outlined in AOAC (2010). The samples' one percent concentration was prepared in ionized water and adjusted to a pH value of 7.4 using 1.0 N NaOH and 1.0 N HCl. A high-speed blender was used to blend 100 mL volume (V1) of the concentrate suspension for three minutes before it was poured into a 250 mL graduated cylinder. The volume of the foam (VF) was measured right away and computed using equation (6) as reported by AOAC (2010).

3. Microbial Analysis

3.1 The Total Viable Counts (TVC)

We used the pour plate approach as explained by... Nine milliliters of Ringer's solution were macerated with one gram of the sample, and the mixture was well shaken. To get concentrations of 10-2 and 10-3, this was further diluted. Following the transfer of 0.1 mL of dilution from each dilution vial into the appropriate plate, 15 mL of sterile nutritional agar medium was added, and the plates were thoroughly mixed with the inoculum by rocking them. Following a 24-hour incubation period at 38 oC, the colonies on the plates were enumerated and quantified as colony-forming units per gram (cfu/g).

Original cell population = × Df

3.2 Counts of Mold

The pour plate technique was used, as explained by... After transferring the 0.1 mL sample dilution from each dilution into the appropriate plates, 15 mL of sterile Sabourand Dextrose Agar (SDA) medium was added, and the plates were rocked to completely mix the inoculum with the medium. Following a three-day incubation period at room temperature, the colonies that developed on the plates were tallied and quantified as colony-forming units per gram (cfu/g).

3.3 Storage Stability Studies

A food's shelf life is typically the amount of time that it may be stored safely without experiencing any changes to its sensory, physical, chemical, or microbiological qualities. Legumes and cereals frequently have a short shelf life (Temba et al 2017; Ofoedum et al 2024). For a duration of 28 days, the composite flour was kept in a low-density polyethylene bag at room temperature (30 to 37 oC). The samples were taken at intervals of 0, 14, and 28 days, and testing were conducted on a weekly basis to determine the total viable, coliform, and mold counts.

3.4 Statistical Analyses

Analysis of variance was used to statistically examine the results, and Duncan's test was adopted to assess the averages at (p < 0.05). The average values and standard error (SE) of the triplicate observations were used to express all of the computed results.

4. Results and Discussions

4.1 The composite flour's functional characteristics

The suitability of food materials for a given food product is determined by their functional characteristics. Table 2 shows the results of the functional parameters of the rice and red kidney beans composite flour.

Sample Code: RICE FLOUR (RF): RED KIDNEY BEAN FLOUR (RKBF).

Table 2 observed that bulk density increased with increasing rice flour substitution, ranging from 0.61 to 0.74 g/ml. Sample B (100:0), formulation recorded the highest score, while the least was seen in Sample A (0:100). This pattern arises from the higher starch content in rice flour, which contributes to tighter particle packing and reduced porosity. In contrast, red kidney bean flour contains more protein and fibre, which create a more open structure and lower packing efficiency, thereby reducing bulk density. In comparison to Awuchi et al., (2019), who reported that higher starch content leads to increased bulk density. It also aligns with Kraithong et al. (2018), who described bulk density as an indicator of porosity, and Oppong et al. (2015), who linked it to flour heaviness and handling properties. These results indicate that higher rice flour blends produce denser flours suitable for compact packaging and transportation, while lower bulk density formulations may require larger packaging space but could be preferable for products requiring smoother textures.  (Agunbiade & Ojezele, 2010).

Water absorption capacity (WAC), is an indication of how food material will absorb water during processing, and the absorption power of food material depends on carbohydrate polymer or the amount of native starch in such food products (Falade and Okafor 2013; Ofoedum et al 2024). The results indicated that water absorption capacity increased with higher proportions of red kidney bean flour, with Sample A (0:100) showing the highest value (2.46%) and Sample B (100:0) showing lower values. The increase noted in the blends of flours could be as a result of high protein and polysaccharide content in red kidney bean flour, which contains hydrophilic groups capable of binding water molecules. The presence of hydroxyls in fibre structures enhances water interactions as a result of hydrogen bonds. This finding is consistent with Sreerama et al. (2012) and Falade and Okafor (2013), who reported that WAC is influenced by protein and carbohydrate composition.

These results indicate that high WAC flours are suitable for products such as doughs, soups, and baked goods, while lower WAC formulations may be desirable for producing thinner gruels for infant foods (Onweluzo & Nwabugwu, 2009).

Oil acts as a flavour enhancer, a consistency attribute, and an important enhancer of mouthfeel hence, the capacity of a food component to entrap oil is a favourable characteristic (Khattab & Arntfield, 2009). By increasing the rice flour substitution in the flour blends, the oil absorption capacity decreases and increases with higher red kidney bean content. This is due to the fact that diets strong in protein have a relatively high rate of oil absorption. This finding is consistent with (Suresh and Samsher 2013), who noted that the oil and water binding capacity of protein in food depends on intrinsic factors such as protein conformation, amino acid composition, and surface polarity or hydrophobicity. According to (Chowdhury et al., 2006, Ofoedum et al 2025a), these results indicate that a high oil absorption capacity in flour blends is desirable for bakery applications, as it enhances flavor retention, mouthfeel, and overall product quality.

The data recorded show that foaming capacity and stability increased with increasing red kidney bean flours contents, with 100% red kidney beans flour showing the highest scores. This behaviour arises from the higher protein content in red kidney bean flour, which enhances the formation and stabilization of air bubbles due to its surface-active properties. As compared to Jitngarmkusol et al. (2008), who noted that protein-rich flours improve foaming properties, though excessive foaming may reduce stability due to weaker film formation.

These results show that blends with higher red kidney beans content are suitable for bakery products such as cakes and cookies, where good foaming capacity and stability contribute to improved texture and volume. Iwe et al., (2016) and Akubor et al., (2000) reported that good foaming capacity and stability are essential for product flours to be used to produce varieties of bakery food, such as biscuits, cakes, bean cakes, cookies, and even as functional determinants in various food product formulations.

Swelling capacity is an important functional property in food formulation, particularly in bakery products, as it reflects non-covalent bonding within starch granules and is influenced by the amylose–amylopectin ratio. (Iwe et al., 2016). From the Table 2 swelling capacity increased with increasing rice flour content, with Sample B (100:0) showing the highest value (2.84%) and Sample A (0:100) the lowest. This behavior arises from the higher starch content in rice flour, particularly the amylose–amylopectin composition, which enhances water uptake and swelling of starch granules. As compared with Iwe et al. (2016) and Awuchi et al. (2019), who reported that swelling capacity is influenced by starch structure and composition to absorb water and swell. These results indicate that a higher rice flour inclusion improves swelling capacity, making the flour blends suitable for bakery and thickened food products where water retention and volume expansion are important.

When heat and water are present, the intermolecular connections between starch molecules break down, allowing the hydrogen-bonding sites (hydroxyl hydrogen and oxygen) to absorb additional water, this process is known as gelatinization. As a result, the starch granules dissolve in the water permanently. (Awuchi and others, 2019). The gelatinization temperature ranged from 69.15°C to 78.63°C, with Sample A having the highest value (0:100), according to the data in Table 2. The quantity of damaged starch granules, which will swell more quickly, determines the gelatinization temperature. This results from variations in starch structure as well as the inclusion of non-starch elements like fiber and protein, which can impede water penetration and postpone gelatinization. In contrast, Stanley and Linda (2001) connected gelatinization to the extent of starch degradation during grain milling, while Awuchi et al. (2019) classified it as reliant on starch structure.

These results indicate that higher gelatinization temperatures may require more energy during processing but can enhance product stability and texture in applications such as sauces and baked godos.

The microbiological quality at the level of general microbiological contamination was evaluated using storage total plate counts. Over the course of the 28 days of storage, both total viable counts (TVC) and total fungal counts (TFC) grew gradually, with values ranging from 2.53 x 10² to 9.33 × 10³ cfu/g for TVC and 1.4 × 10² to 9.20 × 10³ cfu/g for TFC (Table 4.2). Over the course of the storage period, samples containing larger amounts of red kidney bean flour showed a more notable increase in microbial load.

To evaluate microbiological quality at the level of general microbiological contamination, storage total plate counts were employed. Total viable counts (TVC) and total fungal counts (TFC) ranged from 2.53 × 10² to 9.33 × 10¹ cfu/g and 1.4 × 10² to 9.20 × 10³ cfu/g, respectively, over the course of the 28-day storage period, as shown in Table 4.2. Significant increases in microbial load were seen throughout the storage period in samples containing increasing percentages of red kidney bean flour.

This may be explained by red kidney bean flour's ability to absorb water and its nutritional makeup, which is high in proteins, carbohydrates, and important minerals. Red kidney bean flour offers an ideal nutrient medium for microbial growth, and higher moisture retention promotes microbial proliferation (Adebayo et al., 2013; Iwe 2010).

These conditions collectively promote both bacterial and fungal growth during storage. This finding also aligns with Mbaeyi et al., (2015), who noted that protein-rich flours are prone to quick spoilage and should be utilized as soon as possible. Furthermore, after 4 weeks of storage, the observed microbial counts fall within the acceptable limits (104- 105 cfu/g) for composite flours, as recommended by (ARSO, 2014). These results indicate that, while the composite flours remained microbiologically safe within the storage period, formulations with higher red kidney bean content may have reduced shelf stability. Like other food crops, rice and red kidney beans are susceptible to microbial contamination due to a variety of environmental factors, such as drought, rainfall, humidity, winds, temperature, frosts, sunlight, soil conditions, insects, rodents, and birds’ activity, storage and handling, moisture control, etc. This emphasizes the necessity of appropriate storage conditions to reduce contamination and increase shelf life, such as moisture management and airtight packaging. Bullerman & Bianchini, 2009; Ogunjobi & Ogunwolu, 2010; Adegoke & Letuma, 2013.

5. Conclusion

The analysis of the composite mixture of rice and red kidney bean flour revealed that, with higher percentage of red kidney bean flour in the mixture, WAC, foaming capacity (FC), OAC became improved. Conversely, the swelling index (SI) and bulk densities increased with increasing proportion of rice flours. The shelf-life evaluation showed that flour blends containing a higher rice flour content have the best storage stability. The microbiological quality of the flour also remained within the permissible limits during storage. This shows that, if properly packaged and stored in an ambient environment, the integrity of the food (samples) derived from them will be preserved.

The results of this study could be applied to the manufacturing of low-fat, low-gluten, and high-fiber baked goods. In addition to raising the product's protein level, this will help those who have celiac disease and inspire them to start enjoying baked goods. According to the findings of the analysis of its composition and functional characteristics, the composite flour also showed a lot of promise as an ingredient for other food product formulations.

Dear Maria Emerson, Editorial Coordinator of International Journal of Clinical Case Reports and Reviews, What distinguishes International Journal of Clinical Case Report and Review is not only the scientific rigor of its publications, but the intellectual climate in which research is evaluated. The submission process is refreshingly free of unnecessary formal barriers and bureaucratic rituals that often complicate academic publishing without adding real value. The peer-review system is demanding yet constructive, guided by genuine scientific dialogue rather than hierarchical or authoritarian attitudes. Reviewers act as collaborators in improving the manuscript, not as gatekeepers imposing arbitrary standards. This journal offers a rare balance: high methodological standards combined with a respectful, transparent, and supportive editorial approach. In an era where publishing can feel more burdensome than research itself, this platform restores the original purpose of peer review — to refine ideas, not to obstruct them Prof. Perlat Kapisyzi, FCCP PULMONOLOGIST AND THORACIC IMAGING.

Dear Reader: We have published several articles in the Auctores Publishing, LLC, journal, Clinical Medical Reviews and Reports in recent years (CMRR). This is an ‘open access’ journal and the following are our observations. From the initial invitation to submit an article, to the final edits of galley proofs, we have found CMRR personnel to be professional, responsive, rapid and thorough. This entire process begins with Catherine Mitchell, Editorial Coordinator. She is simply outstanding, and, I believe, unparalleled in her capacity. I cannot imagine a more responsive and dedicated Editorial Coordinator. As I read the dates and timing of her correspondence with us, it seems that she never sleeps. I hope Auctores Publishing, LLC, appreciates her efforts as much as these authors do. Thank you to Auctores Publishing, LLC, to the Editorial Staff/Board, and to Catherine Mitchell from a grateful author(s).

Dear Mayra Duenas, Editorial Coordinator of the journal IJCCR, I write here a little on my experience as an author submitting to the International Journal of Clinical Case Reports and Reviews (IJCCR). This was my first submission to IJCCR and my manuscript was inherently an outsider’s effort. It attempted to broadly identify and then make some sense of life’s under-appreciated mysteries. I initially had responded to a request for possible submissions. I then contacted IJCCR with a tentative topic for a manuscript. They quickly got back with an approval for the submission, but with a particular requirement that it be medically relevant. I then put together a manuscript and submitted it. After the usual back-and-forth over forms and formality, the manuscript was sent off for reviews. Within 2 weeks I got back 4 reviews which were both helpful and also surprising. Surprising in that the topic was somewhat foreign to medical literature. My subsequent updates in response to the reviewer comments went smoothly and in short order I had a series of proofs to evaluate. All in all, the whole publication process seemed outstanding. It was both helpful in terms of the paper’s content and also in terms of its efficient and friendly communications. Thank you all very much. Sincerely, Ted Christopher, Rochester, NY.
